Introducing the Essential Food Safety Factsheet for Regulators: Mobile Food Unit Best Practices

In the ever-evolving world of mobile food units (MFUs), ensuring food safety is vital. Due to significant variation among local regulations, there is lack of a comprehensive regulatory framework. This fact sheet is NACCHO’s initial attempt to establish standardized language regarding MFU definition and the necessary requirements for aspects such as plan reviews and inspections. The goal is to ensure these units operate safely while complying with local food safety regulations.

NACCHO is excited to announce the release of the “Essential Food Safety Factsheet for Regulators: Mobile Food Unit Best Practices.” This comprehensive guide is tailored specifically for food safety regulators who play a critical role in overseeing mobile food operations and safeguarding public health. This factsheet provides a detailed overview of best practices and regulatory recommendations, aiming to create a standardized approach across various jurisdictions. Key features include:

  • Risk Rating System: Categorizing MFUs based on the complexity of food handling and preparation.
  • Pre-Opening Plan Review: A step-by-step guide to ensure compliance before operations begin.
  • Commissary Requirements: Detailed information on agreements and facility standards necessary for daily operations.
  • Routine Inspection Checklist: A thorough list of exterior, interior, and operational requirements to maintain food safety.

Supported by the Centers for Disease Control and Prevention and developed with input from NACCHO’s Food Safety Workgroup, this factsheet is a helpful resource for regulators dedicated to maintaining high standards of food safety in mobile food establishments.
